Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • Olive oil for cooking
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef, breaking it apart with a spoon, and cook until browned.
  5. Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
  6. Pour in the crushed tomatoes and beef broth, and bring the mixture to a simmer.
  7. Once simmering, add the kidney beans and black beans.
  8. Cover and let it simmer for about 30-40 minutes, stirring occasionally.
  9. Adjust seasoning to taste and serve hot, garnished with fresh cilantro if desired.
